These cookies are thin, chewy, buttery, and full of pistachio flavor! They have ground pistachio in the dough and are topped with more pistachio, dark chocolate, and sea salt.
Ingredients:
Cookie Dough:
1 cup all purpose flour
½ cup bread flour
½ cup ground pistachios, plus ¼ cup more for topping
1 cup dark brown sugar, packed
1 tsp salt
½ tsp baking soda
2 tsp vanilla extract
1 egg, beaten
1 tsp molasses
½ cup butter, softened JUST ENOUGH to mix
Topping:
¼ cup dark chocolate, shaved or finely chopped
1 tbsp sea salt
Sift together in stand mixer all purpose flour, bread flour, salt, and baking soda. Add brown sugar and ¼ cup ground pistachios. Add butter and mix on medium high speed until combined. Add egg, molasses, and vanilla and continue mixing (dough will be crumbly, then cohesive).
Form into 1 inch balls and space well apart on a parchment paper lined baking sheet. Use the bottom of a glass jar to slightly flatten dough balls. Sprinkle top with the remaining pistachios. Bake 10-12 minutes at 350 degrees F (check after 9 minutes to be sure you don’t over bake in case your oven runs hot!). Cookies will be very soft in the middle but will set up as they cool. Immediately sprinkle top with dark chocolate and a small pinch of sea salt. Cool for 10 minutes before removing from baking sheet.
